Daisen Soba

A traditional Daisen dish that remains a favorite today. It originated from the cultivation of buckwheat in Daisen, which was encouraged by Kiko Shonin, the leading authority on the esoteric teachings of Tendai Buddhism from the late Heian period to the early Kamakura period. It is also said to be the birthplace of Izumo soba, a style famous throughout Japan.
